Cake Decorating: All levels – Sydney Course

This course is suitable for all levels and will introduce beginners to the art of cake decorating. Students who are at the intermediate or advanced level are also welcome and will be offered more challenging projects according to their interests.

Students will learn techniques on how to ice a cake using sugarpaste (rolled fondant), make a variety of decorative sugar flowers, create simple figurines using modelling paste and do simple piping using Royal icing.

Cake decorating techniques learnt in this course can be used on cupcake decorating too.

Course Outline

In this course, you will learn:
• The different types of equipment and supplies needed for cake decorating;
• How to identify which icing to use for each project;
• The difference between sugarpaste and modelling paste;
• How to make and colour modelling paste;
• How to make Royal icing;
• Simple piping using Royal icing;
• How to use various tools and techniques to create simple sugar flowers and figurines;
• How to make flower moulding paste;
• Which colours to use on different styles of cakes;
• How to assemble flowers and leaves to decorate your cake;
• Using Royal icing for different projects;
• How to ice a cake using sugarpaste; and
• How to cover and decorate a special occasion cake.

You will be provided with weekly notes to refer to at home.

Course Outcome

At the end of the course, you will understand cake decorating theory, be able to make a variety of flowers and decorations, and assemble and decorate a special occasion cake suitable for birthdays, weddings or other celebrations.

• A pen and pad
• The material and equipment required for the course will be discussed at the first lesson.
• Comprehensive course notes will be provided.

Important Information

This course is not about cake baking and cup cake decorating. This course does not use buttercream, fresh cream or chocolate ganache to ice the cakes.

Students will be required to purchase equipment, some of which can be supplied by the teacher if required.

Prerequisite: Desirable

• This level is suitable for complete beginner and assumes no prior knowledge of cake decorating.
• More advanced students will be offered more advanced projects of interest to them.

Delivery Mode

The class is delivered in a craft room with sink and hot water available.

The project for the week is demonstrated by the teacher, and then students get the opportunity to make an example in class with the teacher’s help and advice
